This was on my bucket list of foods I would like to
experience eating in the Caribbean’s on this trip!
After surviving our drive thought Montego’s old town it was then up a hill which was a bit more of a challenge for this poor old rust bucket! No posh transfers here, this bomb has more squeaks than my gardening truck back home so that is saying something.
Arriving into a stunning tropical oasis on top a lush hill over looking the teal waters of Montego Bay below.
Still with the smell of the mornings sweeter humid air wafting out from the jungle.
Mixing all these jungle smells and now with the smoke from the wood cookers I was starting to get a bit peckish and excited for what was in store in todays cooking class!
Boganvillias seem to grow well here and added a splash of colour to all the greens of the jungle.

was laying out on the benches when we arrived, great I’m thinking it will be a hands on class … dismembering a chicken, digging for yams deep in the forrest … but no sir that would involve sharp knives and yam collection could be
seen as a falls risk!!! 😂
alas no the apron was so we wouldn't get our clothes splashed when the girl place our deboned chicken fillet into our SS bowl prior to us sprinkling our pre measured spices from on our benches.
PPE was a bit OTT for what we actually did!
but we looked the part. I was a rebel and didn't use the one size fit all plastic gloves … because, frankly one size doesn't!!!
The stunning flavours of marinating Jerk chicken in spices and
the secret my friends is Pimentos and being cooked in a jungle over a wood fire with the added flavour of char and smoke.
They were excited to introduce us to Pimentos, Sandy said she was tasting cloves and to her it tastes like allspice and later in the recipe it said if you can’t get Pimentos use allspice.

But wait there is still more to do class, as well as the dried spices that you all sprinkled over your chicken … and I was complemented for sprinkling mine from such a height!!
Like a real chef I was told … who me! we then made a wet marinade from ingredients off the below table, but our PPE was still not needed for doing this as this was assigned to the
Real Real chef up the front!
Always better to have more staff than dining guests
All jokes aside it was a great day and the end result was simply tasty smokey spicy BBQ chicken … I might go out on a limb and try to cook it at home.
All sounds wonderful Peter and Sandy. Though I'd best not comment on the cooking, as you know I need a recipe book to boil water. So a lot of the terms were a bit like the plane you flew out of Australia in. Somewhat over my head. But I'm loving the posts, once again, it all sounds incredible.
