BABA GANOUSH
1 eggplant, long and lightweight
Juice of 1/2 lemon
Salt & pepper to taste
8 oz. Plain yogurt
1 clove garlic
Dash olive oil
Bake eggplant at 350 deg until soft app 1/2 hour
Test with tooth pick
Cool, peel, and remove head
Place in food processor add garlic till texture you want
Add lemon juice, yogurt, salt & pepper
HUMMUS
16 oz. Canned garbanzo beans ( chick peas )
2 to 3 tablespoons tahini
Juice from 1 lemon
1 to 2 cloves garlic
1 teaspoon salt
Pinch cayenne pepper ( optional )
1/2 cup olive oil ( or to taste )
Drain and wash beans place all ingredient in food processor blend well
Add a tablespoon of water at a time until you have a smooth, creamery texture
Taste and adjust adding additional lemon, tahini or garlic to suit.
HINTS FOR A SMOOTHER PASTE
1- wash beans
2- 30 to 40 seconds in a micro or heat
3- double peel the beens
PITTA CHIPS
6 large pitta
6 teaspoons vege oil
6 tablespoons Parmesan cheese
2 teaspoons salt
4 teaspoons garlic powder
2 teaspoons oregano
Mix the dry ingredients together, cut the pitta by separating the two halves slicing into triangles
Brush the pitta with the oil and sprinkle with the dry mixture place in a mod oven app 5 mins
