Bread Making Class



Another cooking class this morning prior to arriving into the Greek island of Santorini.
Today is a bread making class featuring Philippine bread called Ensaymadas as lots of the bakers on board are from the Philippines

Ensaymadas are sweet with a hit of cheese, look like a small cinnamon swirly bun.
Traditional eaten at breakfast ( ramp up the fillings with jams, spreadable chocolate, or loose the sugar to create a savoury treat also, very versatile recipe and technic

1 tbsp dry yeast ( if instant dry yeast just add with dry ingredients )
( if not instant follow the below instruction )
3/4 cup warm water or milk
1/4 cup + 2 tbsp sugar
1 tsp salt
1/2 cup butter, soften
6 eggs
6 cups all purpose flour

Filling & Toppings
4 oz.Edam or cheddar cheese, grated
1/3 cup sugar
1/4 cup butter, softened

Put the water in a mixing bowl and sprinkle the yeast over the top, leave for 5 mins for fresh yeast 15 mins for dry yeast

Stir in the sugar, salt, half the butter, eggs and 3 cups of the flour
Beat the mixture in till smooth
Gradually add the remaining flour to make a stiff dough
Turn out on a floured work surface and knead it until it is smooth
Return it to the bowl, cover, leave warm place 1 hour or until it has doubled in size

Knead the dough again then roll out to a 6mm thick rectangle, brush with the fillings butter and sprinkle with the cheese.
OR optional other fillings at this point
Fold in half and with a pizza cutter cut strips 15mm wide and about 200mm long
( HINT when you are rolling out the dough to start with get one side about 400mm wide this will help )
With your strips 15mm x 200mm hold both ends and twist them several times
Now for the tricky bit to explain, but work with me and see you you can understand what I'm try to write.
So OK holding again top and bottom of the strip in a vertical plain with you top hand  swirl and rotate into your bottom hand all the time lowering your top hand to make a bun!!!! Hmmm thought of many ways to explain it, but the best I can come up with is it looks like a flat dog turd ... SORRY ...

Proof for about 20 min at 75 deg F
At this stage you can even freeze them and bake later.

Preheat the oven to 375 deg F and bake for approx 15 mins.
Cool them on racks 15 mins then brush with butter and a sprinkle of sugar
