Chicken and Sun Dried Tomato Meatballs

So our last cooking lesson on the cruise to get our tummies ready for Italian food again it is simple. But that is Italian cooking don't do to much to the produce it's simple, fresh and tastes oh so GOOD.

4 sun dried tomato  cut into 1/2, drain and chop
2 garlic clove crushed
1 large jalapeño chopped
Salt and pepper
1/4 cup breadcrumbs
1/2 kg minced chicken breast
1 large egg beaten
1 tab milk
1/4 cup plain flour
1 can tinned tomato
1/2 tea oregano
2 tab evo
1 tab chopped parsley

In a food processor, blitz the sun dried toms, garlic, 1/2 jalapeños, 1/2 tea salt and pepper till finely chopped. Add breadcrumbs and combine. Add in the chicken and egg, blintz.
Using moist hands form balls about 1 1/2 tabs in each, approx 20.
Dust with flour
In the food processor add the remaining garlic, jalapeño pulse till smooth with tomatoes and oregano.
Put in pan olive oil and gently cook the meatballs to colour 5-6 mins. Cover with tomato and simmer till cooked through and sauce thickens approx 5 mins. Sprinkle with parsley and serve with pasta or crusty bread.
