BBQ and Salad Italian Style



 A bit more history ... the road across Italy from Roma to Faro on the Adriatic coasts was original constructed way back in Roman time so that they could get the grain from Marche back to the emporia's of Rome.
Thank goodness they did that as this is a great simple but yummy salad to go with a BBQ
 
Add grains to cold water and bring to the boil, cook till soft with carrot, onion and celery.
 
 
Add cold chick peas that were also cooked in carrot, onion and celery, along with some rocket, some olive oil "oooooof course ... it is Italy" 2 parts oil to 1 part with apple vinegar and some luscious autumn pears but just before you serve.
This salad is so seasonal so depending on the season as to what other little delights you may add.
Spring it could be peas and mint or asparagus, summer it could be beans or zucchini.

Now from the fridge get some pancetta in its raw state (so pork belly) cut 6mm thick, not a cut we see in Tamworth along with some milk feed veal and pork sausages, heat up the coals on the outdoor BBQ grab a great local red sit by the fire and wait. Suck in as much Italian atmosphere as possible.

 
Cook slowly to get a truly great smoky taste
 

And serve on a ancient table in the rustic 500 year old kitchen, can't get more Italian than that.
