No. 3 Pre-Main - Risotto with Fresh Porcini


 Today we will use this rice for the risotto it is 3.5 E kg and is aged to 3 years

  This rice you can also use for risotto, is 15 E kg and aged for 7 years, this is the rice they use at the hotel "for George"!

So today's rice is a plump short grain
 
 To start any risotto you need a good stock
 
Dry roast rice for about 2 min with a little oil
 
 A little stock bit by bit "Paino Paino"
 
Gently work it baby! after 5 mins add sliced fresh porcini pre-cooked in a little sunflower oil
 
 
Rice cooked for a total 15 mins 
 
2 mins in the pan for the Porcini garnish
 
 OMG so good.
 
 To date the best Risotto I have had in Italy
