Pork with Stale Bread and Shaved Greens


In the markets we picked up some shaved greens that will be part of the main


The greens are a mix of cabbage and broccoli and made a great side dish to the Pork.


Get some corn bread and was it yum, a great texture, solid and moist. Break into small bits and soak in the water that you use to blanch the greens.

 
Then cook some chorizo in a pan and remove retaining the pan fat, add the sodden bread and cook till it forms a crust and turn and make a crust the other side.
put back the chorizo and add parsley.
yum what a great side dish.

The pork was marinated in garlic, salt, white wine red pepper sauce


Better to marinate overnight and if you do that you would use less salt, but today with the quick cook more salt to get the flavour.
dry of the meat and then pan fry, put into over and add some of the marinated cook low heat 1 hour.
