Monkfish, Prawns with Rice "Lisbon Style"


To me the dish of the day and sort of a take on the Italian risottoMonkfish, Prawns with Rice
 




Start by making a fish stock




Oil in a pan cook some onions for 5 min then add the garlic.



Fry the rice, use a short grain as it has more starch which adds to the creamy end result, cook another 5 mins 



Add chopped capsicums and mushed tomato   



At this point add salt and cover with fish stock

 


Total cook is about 20mins and you are looking for a wetter look and an Italian risotto.
 
 
Add the seafood and cook till cooked!


 Just loved this dish and it could be adapted in may ways
