Caciocavallo Cheese

Caciocavallo Cheese is from the southern food region of Puglia.

 
It is a aged bell shaped cheese and the guys here at La Tavola Marche get in the spring when the cows milk is at it best with more protean and sweeter from the spring grasses.
They store it for 6 months in their under ground cantina at 12 deg.
Hmmmm going to need a cantina in Tassy I can see!!!
