Zuppa di Cozze Mussel Soup

Now we are talking I LOVE mussels, these Sicilian Cozze (your Italian word for the day) are small and sooooo sea sweet
The Sicilian love their seafood so im in seafood heaven at the moment!
This dish is commonly eaten at Christmas Eve


 
So easy to cook ... well except for getting the Mediterranean mussel water, that will be a bit hard back home.
 
1. Heat the oil in a large saucepan and sauté onion, celery, parsley and garlic until translucent.
 
2. Add the tomatoes, salt and pepper, cook 5 to 10 ish mins or QB until the sauce begins to thicken
 
3. Add white wine and cook another 10 mins, adding as much Mediterranean mussel water to keep the sauce thin, place the mussel in with the lid on and cook until they open.
 
 
Goes supper well with a cheeky little vino bianco found only 20mins from the cooking school.
 

 
And of course to finish you have to have some local breads to mop it all up, don't want to waste a drop.
Later this week on Sunday we are booked into a cooking class where we are making bread.
