Octopus with Lemon and EVO or with Spaghetti and Almond Pesto

Remember me from the lunch class in Gola ... 
I,m so tasty with just lemon and olive oil.









Bring a large pot to rapid boil. Dunk the octopus 3 times before submerging totally, this make the tentacles curl. Cook with high simmer for 40 mins, rest in the hot water for a further 20mins.
Serve warm from the pot with lemon and EVO.



Octopus with Spaghetti and Almond Pesto
Prepare octopus as above. Cook pasta and while cooking chop octopus into piece. Make a quick pesto with rocket, EVO, salt and almonds. Leave almonds a bit chunky. Toss together once pasta is cooked with some pasta water, this traditionally a wet pasta dish.
