Bread Making Day


Instruction are to meet a Bella Red Head at the parking station V
at the Valley of the Temples.
As you guessed it, the location has no actual address!
Not sure how the Sicilian's get any mail!


So that's just 500m up the road from the first sightings of some ancient Greek Columns, loving the land marks that are used in our directions and well they do stick out like ...

Introducing one very Bella Red Head

The location for today cook is in a small allotment on the outskirts of Agrigentra and was where Annalisa husband Farbo came as a boy to escape the city for the weekends over the summer.
It's a three room weekender so a panorama shot was needed to show you the kitchen space. It is all original and not been renovated since the family took over some 50 years ago.

There are 80 olive trees and all on about 500m/2 and the rest of the land is planted out with other fruit and vege. So no need to go to the market syou come to your own patch each weekend and live off what you grow, so Sicilian.

 

Out the front is a undercover area where we ate today and the family would have dined in years gone.


The original stove, simple but that's what todays cooking experience is about ... getting back to the basic.



Semolina flour is used in Sicily so sifted into a great timber trough

Add the fresh yeast and a little water, combine the yeast and some flour and water, THAN add the salt to the rest of the flour as salt kills yeast. Lesson 1 Pete
 

Many hands make light work


Taste at this point and add a Sicilian "pinch" of salt is needed.
and work in a good amount of EVO


Kneed and bless the dough with a cross, cover to rise






 
Simple, then put to bed for 1 hour to finish the rise

Add sesame seeds and egg white wash and bake 20mins
 



Take further instruction and start on the Mignolate, a stuffed and  rolled bun.  

Look at the kids playing with play dough, but better as we get to add olive oil.



 So add onion black olives, lots of black pepper and parmesan cheese

Roll in from both side
Cut down the centre
Tear into section, squash
and twist into buns

Bake for 20 mins
