Andrea 3rd Lesson


Sandwich of unleavened  bread with lightly smoked , sea bass and stir fried leek , red onions and liquorice
 
Serve 4 :
Flour mixture  200 gr
Water  
Salt 5 gr
Pepper
Olive Oil  
Seeds ( optional )
Sea bass fillet 300 gr
Olive wood chips for smoking
Leek 100 gr  
red onions 100 gr
Tomatoes 100 gr
Olive Oil
Liquorice powder
 
 
Method :
 
Dress the fresh fish with salt , pepper add Olive oil. Put the fish on a metal net stainless steel  smoker with Olive wood chips. Cover it and smoke it lightly for few minutes.( timing depends on the size ) .
Cut the  leek , red onions and tomatoes thinly  and stir fried with salt and liquorice powder.
Prepare the bread dough  and roll it on a table very thin , grill  it or bake it until it becomes  crispy .
Cut in triangle shapes before serving .
