Andrea 5th Lesson


Really liked this one and would be great with salmon it was real tasty so it may make a winner on my 50th birthday table!!!!!!
 
Trota en Saor :
Marinated  lake trout , Garda style
 
Ingredients
(serve 4 ) :  
Fresh lake Trouts nr 2 small size
Capers 50 gr
Anchiovies fillets nr 4
Red onions nr 2
1 soup spoon  apple vinager
Extra Virgin Olive Oil  ¼ tea cup
Fresh Garlic nr 1 clove
Oregano 1 pinch
Fresh rosemary
1 table spoon of sugar
Chili powder 1 pinch
 
For the polenta :
Water ½ lt.
Corn flour ( polenta ) 200 gr
salt 1 pinch  
 
Method :
 
Clean the trouts and boil them. 
Remove all the fishbones and the skins. 
Display the meat in an oval plate, in the meantime prepare the sauce frying olive Oil , chopped garlic and sliced red onions till transparent 
Add all the other ingredient stir for 5 min.
Top the trout with the sauce and mix it gently.
Serve hot with soft or grilled polenta.
