Andrea 4th Lesson


Andrea 4th lesson 

Quenelles (dumplings)  Cheese in tomato soup (optional) 
Ingredients for 4 people:
gnocchi:
400 grams of fresh ricotta
2 eggs
1 tablespoon of flour + 2 tablespoons of bread crumbs
3 tablespoons grated Parmesan cheese
lemon zest
salt, pepper and nutmeg

Method : 

All the ingredients work quickly to obtain a firm dough, let stand in refrigerator for about an hour.
With the help of 2 tablespoons prepare dumplings, place them into boiling water, wait until them come  back to the surface and after a few minutes then drain 
Serve in a bowl with the cold or hot tomato soup or roll in a slice of bacon and roast them. 
 
 
Almond milk bavaroise
 
Ingredients :
Serve 4
Milk ½ lt
Almond extract  1 coffee spoon
Sugar  100 gr
Whipped cream ½ lt
Maraschino ½ glass
Gelatine nr 4 ( 20 gr )
Toasted and diced almond 30 gr
 
Method :
Bring the milk to boil with sugar , maraschino and almond extract. 
Add the gelatine and cool it down. 
When the milk will be cold enough and sticky  to a spoon , mix the whipped cream and pour into martini glasses.
Serve with light sugar caramel and toasted almonds.

This was served in a small wire hinged glass canister look real cute and tasted devine
