Look at the colour of these egg,


they are polenta only, feed chickens.
Yum, after 2 and 1/2 months of Italian sweet breakfasts today at Casa Fabbrina we were offered scrabbled eggs  ...
so I couldn't resist them 
 
 
The other day I touched on the breads here in Tuscany as well as Umbria and La Marche being without salt, apparently a bigger story there but up to today have a few conflicting reason.  First being religion, well it is Italy so that a possibility! The other to do with the salt trail from the south in Sicily to the north in Roma where it was stoped for their use! and the last we were told it was to do with the word salt "sale" comes from "salary" so it was a trade for money and poorer food region
.
But up until today we have been saying that the food we are trying in these 3 food regions is fairly salty .... and the bread is made without salt as a compensation for that.
Well they all sound plausible so may never know! 
So this morning with unsalted bread, unsalted butter in the pan to cook the eggs, with what we have been told is a Sicilian pinch "generous' of salt it was perfectly balanced.
