Starter of Tuscan Lentil Soup, simple but tasty and a great winter starter.
Veges used + potato and onions
Cut veges in cubes all the same size, cook on low heat in their own juices till potato is softish.
Add tomato paste ... commercial ... hmmmm ... but for us we would use a home made one like we learnt to make in Piobbico.

Add lentils
Bella Sandy to stir occasionally
Flood with water cook till lentils are soft, season to taste with salt and pepper and pepperoncino
Perfect with the lovely Schiacciata Bread that we made.
