Puglia loves Legumes

Fava bean paste with Chicory "Cicorie"


Soak for 4 to 5 hours, add 2 fingers of water above the fava, cook on high till boiling then skim off the scum.
Turn onto low heat, cook for 1 to 1/2 hours.
Don't stir if water needs topping up add boiling water



Bay Leaf 1/2 onion  salt


cook slow 1 1/2 hours it almost makes its own paste in the cooking process


  Blitz and serve with  Chicory, wold go great with broccoli.
