Tools of the trade and Lardo verses Butter

So many gadgets and as you all know Sand's is a gadget girl.




  
To start we make a quick Crostata

  
Tonight we used a pigs lard for the Crostata and the results are just a fabulously crisp and crumbly crust. So all the controversy about butter is better ... here lardo rocks.
I'm thinking that you will be tasting the bacon!!! in the Crostata but not a hint, just a beautiful sweet tart.
 
 
Have some Italian notes about the amego and the cholesterol differences but all in Italian so need to do some translation before I post comparisons
