Goats Cheese Pastry Triangles

Thank goodness we had a early check-in as it's back into a new kitchen for the next 3 days.
 
Starters of Goats Cheese Pastry Triangles ...
 

This is simular pastry to what we were buying at the Marrakesh markets but this is a commercial product. It is more like the texture and graininess of a very very thin but strong crepe


  Roll 2 sheets together and cut in to 60mm wide strips


  Filling of goats cheese, oregano, salt, pepper and olive oil


 Not as ease as it looks but after several goes I think I've got it.


Perfect, the corners need to have no holes that will let the hot filling escape

  
Todays team in the kitchen, one very shy girl "not" if she wasn't poking her tong out, giving me lip she was always laughing.
Looking forward to cooking here I think its going to be lots of fun going on todays lesions.

  1. Very similar to Greek cheese triangles that are baked in a moderate oven instead and phyllo pastry being the pastry base.
