Chocolate Orange Peels





These Japanese oranges are all about the pith, very pithy and different from our Aussie eating orange

Soak peel of 3 oranges in water 6 hrs

Boil 3-4 times to remove the bitterness

When soft but still a little tart dry out the water by placing them on a rack.
 
Cut into thin slices, boil in sugar syrup 100 water 200 sugar 
Put in fruit and cook till almost all syrup is gone
Dry on rack and dip in dark melted chocolate
